MSETO (Rice and Lentils)

Zutaten/ Ingredients. (For 2 people):


1/2 cup of lentils (Dengu or Mung beans or choroko)
1/2 large cup of rice (3 oz)
1 Onion.
1 cup of grated coconut
salt and pepper
about 1 tablespoon cooking fat

Zubereitung/ Method:

1. Soak the lentils overnight and then skin them.
2. Put the lentils to boil in just enough water to
cover them.
3. Clean and wash the rice.
4. Put the rice to boil. The boiling water should be
at the same level as the rice.
5. Peel and slice the onion.
6. Prepare one cup of coconut milk.
7. Fry the onion and season well.
8. When the lentils are nearly ready, add them to the
fried onions.
9. Add the rice to the lentils and onions.
10. Pour the coconut milk over this mixture, stir
occassionally. (This should be just enough to finish
cooking both the rice and the lentils, without making
the mixture either too wet or too dry.)
11. Cook slowly until ready.
Note: This can also be served with meat, fish or
vegetable sauce. I serve it like that.
